Chowchow is a pickled vegetable condiment with roots in both the Pennsylvania Dutch and Southern larders. At Sheppard Mansion in Hanover, Pa., chef Andrew Little uses it as a base for a versatile vinaigrette that can dress salad greens, sauce fish and nap beer-battered vegetables.

We found chowchow at Harris Teeter.

The vinaigrette may be stored in the refrigerator for up to 1 week.
