Some meatless main-course salads leave you hungry a few hours later, but this isn’t one of them. There are plenty of colorful components to chew on, all tossed with a fresh mango sauce that would be at home atop buckwheat pancakes or in a bowl for dipping summer rolls.

Serve alongside toasted baguette slices; or on them, a la tartine; or rolled in a wrap.
