Democracy Dies in Darkness

Authors and playwrights Lillian Hellman and Peter Feibleman shared a love of writing and food in their long friendship; this recipe is from the only book they co-authored and it is the only dish she asked him to make again and again when she wasn’t feeling well. (It is most likely Feibleman’s rendition of this comfort-food classic.)

This eight-ingredient recipe is especially easy to assemble, because there’s no cheese sauce to make in a separate pot. Bacon, black pepper and tomato provide umami-rich counterpoints to lots of cheddar cheese — all components that are layered alternatively with the pasta in an oven-baked casserole.
